How can rapid sensory methods and chemical profiling help ensure the quality, safety, and compliance of the spirits you produce?

Associate members Affinity Labs will take us on a journey looking at how the use of chemical and sensory benchmarking of whiskies and the use of rapid sensory methods help profile a range of different spirit products.

With a range of case studies, Affinity Labs will help producers and suppliers understand how to create base spirits or finished products with unique characters and target aromas and flavours through targeted yeast selection to create a point of difference in the market.

The case studies will include:

  • Whisky benchmarking – understanding the aroma and flavour profiles of whisky styles from around the world – understand how different production methods or styles affect the smell and taste of spirits.
  • Sensory profiling – developing different base (new-make) spirits using different yeast products – understand how different spirit aromas and flavours can be created by yeast selection.
  • Spirit maturation – understanding how different maturation approaches can influence oak characters in matured spirit.

  • how to meet export testing and labelling requirements and ensure safety (e.g. methanol content) through routine and export analysis.
  • investigate and solve issues with taints or faults that have developed in products by understanding troubleshooting methods.
  • gain a deeper understanding of your product(s) characteristics and how different distillation approaches can produce different profiles (aroma/flavour) through aroma and flavour profiling.
