Fossey’s Distillery Lygon St 

Family owned and operated, Fossey’s is the epitome of a boutique distillery.

Embracing family history, sensational local produce and exceptional story telling though the art of Gin & Whisky Swilling and Distilling, Fossey’s has truly embraced the Australian Gin and Whisky culture. Located in Mildura’s most iconic and historical buildings of The Setts, Fossey’s is home to Mildura’s first and only Gin Garden and Gin & Whisky Bar. 

Bringing a little of our mildura flair to “the big smoke” we are very excited to welcome you to fossey’s distillery Lygon St. With the newest addition to our distilling family, our big beauty “Elsie” will be creating absolute magic with our very own Lygon St made products.

Bringing the Spirit of Mildura to our new venue, you can enjoy a Gin (and our other spirits) Tastings, delicious nibbly foods, superbly made cocktails and of course a fully stocked bar with all the usual offerings.

Little Lon Distilling Co

Little Lonsdale, the once 'notorious' north-east corner of Melbourne, was a sight to behold in the 1850s. Fast forward 144 years, to the Little Lon Distilling Co., a gintrified establishment commemorating the rich history of Little Lon with a range of characterful, small batch Melbourne gins that raise a tipple to the delightful deviates that once trod the lurid laneways of Little Lonsdale. Little Lon’s gin is its double-distilled tribute to a hood once heaving with bordellos, bohemians, dance halls, opium dens, and gangsters and whose history is receding into the mists of time. It's the spirit of Melbourne - now in a bottle.

Patient Wolf

Patient Wolf flows from a contemporary interpretation of gin distilling. Since its creation in the 17th Century, there has never been a more used spirit to create controversy or classic cocktails. A mix of attitude, insight, knowledge, native and exotic botanicals, citrus, pure Australian water and an innovative distilling process defines Patient Wolf’s hand-crafted Gin. Patient Wolf believes in a new wave of unrestrained craft-led influence that respects tradition yet challenges the future. That blend of old and new is best typified by its handmade, 220L Müller copper still, custom built in Germany. It took a year to make and uses a new technology, which increases copper contact with the spirit to produce a more pure, aromatic and refined distillate.
